Aloo Matar Recipe

  1. Cook the potatoes till tender.
  2. Peel and set aside.
  3. In the container of a blender or possibly food processor, puree the onions, garlic, and ginger.
  4. In a large heavy-bottomed skillet over medium heat, hot the oil.
  5. Add in the cumin.
  6. When the cumin darkens (1 to 2 seconds) add in the purred onion mix and saute/fry till browned (about 12 min).
  7. Add in the salt, cayenne, turmeric, and tomatoes and cook till they soften (about 5 min).
  8. Add in the peas and water, reduce heat to low, cover and cook for 5 min.
  9. Halve the cooked potatoes and add in them to the skillet and cook covered another 5 min.
  10. Fold in the garam masala just before serrving.
  11. Note: Don't overcook thepotatoes in the first step.
