Preparing Fresh Horseradish

  1. In a sauce pot, combine the horseradish, vinegar and shallots together.
  2. Season with salt and pepper.
  3. Bring the liquid up to a boil and reduce to a simmer.
  4. Simmer the horseradish for 4 to 5 minutes.
  5. Remove from the heat.
  6. Using a hand-held blender, cream the horseradish until smooth.
  7. Spoon the horseradish in a clear small bowl.
