Couscous Salad

  1. Pour boiling water over couscous with the oil and allow to sit covered for 1-2 minutes.
  2. Fluff with a fork.
  3. Add the remaining ingredients to the couscous and mix well.
  4. Serve with grilled or steamed fish or skinless chicken breasts.
