Chili

  1. Directions:.
  2. Preheat oven to 200 degrees.
  3. Place the dried chilies into pre heated oven for 5 minutes (until the peppers smell fragrant).
  4. Pull peppers out of oven and break apart, remove and discard seeds.
  5. Place chilies in a bowl and pour hot water over them.
  6. Let soak for 15 minutes.
  7. After 15 minutes, drain peppers, reserving liquid, and place in a blender.
  8. Place enough reserved liquid in with the peppers to make a thick paste.
  9. Saute meat (in batches with garlic) until browned (add olive oil if you need to) drain the meat.
  10. Set aside.
  11. Place all the peppers onions, remaining garlic and spices in a large skillet with a bit of olive oil and saute for 15 minutes until onion is translucent, stirring periodically.
  12. Place meat and peppers into a large stockpot, add dried chilli paste, stirring to mix.
  13. Mix beef base with beer, and add to the beef and veggie mixture, simmer on low for about 45 minutes to an hour, add tomatoes, tomato paste and beans, and continue to simmer till the cubed stew meat is very tender, another 1-2 hours.
  14. Taste every once in awhile to test seasonings and adjust accordingly.
  15. Can be placed in a crock pot to keep hot.
