Sausage Kebabs with Broccoli, Tomatoes, and White Bean Salad
- 24 cherry tomatoes
- 1 lemon
- 1 tbsp. olive oil
- 2 tsp. olive oil
- 2 can cannellini beans
- 1/2 c. fresh flat-leaf parsley
- 1/2 c. fresh basil leaves
- 2 scallions
- kosher salt
- Pepper
- 8 small sweet Italian sausages
- 12 oz. broccoli
- Heat grill to medium-high.
- Roughly chop 8 tomatoes.
- Grate 2 teaspoons lemon zest and squeeze the juice (you should get about 3 tablespoons) into a medium bowl; whisk in 1 tablespoon oil.
- Add the beans, chopped tomatoes, parsley, basil, scallions, and 1/4 teaspoon each salt and pepper.
- In a large bowl, toss together the sausage, broccoli, and the remaining 16 tomatoes with the remaining 2 teaspoons oil and 1/4 teaspoon each salt and pepper.
- Divide the sausage and vegetables among 8 skewers and grill, covered, turning once, until lightly charred and cooked through, 8 to 10 minutes.
- Serve with the bean salad.
