Orange Bean Muffins
- 1 14 cups all-purpose flour
- 34 cup whole wheat flour
- 12 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cardamom
- 12 teaspoon salt
- 2 large eggs
- 1 (19 ounce) can kidney beans, rinsed and drained
- 23 cup orange juice
- 14 cup cooking oil
- 2 teaspoons orange zest
- 14 teaspoon almond extract
- pre-heat oven to 375 degrees F.
- mix first 6 ingeredients in a large bowl.
- make a well in the centre.
- process the next 6 ingredients in a blender until smooth.
- add to well in flour mixture, and stir until just moistened.
- fill 12 greased muffin cups 3/4 full.
- bake for 20 minutes (until a wooden pick inserted in the centre comes out clean).
- let rest in pan for 5 minutes, then remove muffins to a wire rack to cool.
