Quick Vegetable Frittata

  1. Cook and stir onion and garlic in margarine or butter in 10-inch nonstick skillet over medium heat for 3 minutes or until tender; stir in spinach and tomatoes.
  2. Reduce heat to low.
  3. Pour egg substitute evenly over spinach mixture; cover.
  4. Cook 5 to 7 minutes until egg mixture is cooked on the bottom and almost set on top.
  5. Slide onto serving platter and garnish as desired.
  6. Serve warm.
