Nantucket Clam Chowder
- 1/2 lb diced bacon
- 1 medium onion, diced
- 1/2 rib celery, diced
- 1 1/2 tsp butter
- 1/2 cup flour
- 1 lb red potatoes, cubed
- 1 1/2 quart heavy cream
- 4 can (6.5oz) chopped clams; reserve juice
- 1/4 cup chopped fresh dill
- 1 1/2 tsp pepper
- 1 Worcestershire & salt to taste
- In pot, cook bacon over med-high heat until crisp.
- Add onion & celery; cook, stirring 3min.
- Stir in butter, then flour.
- Stir in cream, clams and their juice & potatoes; cover.
- Cook over medium heat 10-12min.
- until potatoes are tender and soup thickens.
- Add dill, pepper, Worcestershire & salt; heat through.
