Roast Beef.

  1. Mix all the dry ingredients together and rub it on the beef.
  2. Set aside for 1 hour.
  3. Preheat oven to 200 degrees C. Unlike slow cooking, cooking roast beef at 200 degrees C lets the oven get hot enough to brown the outside nicely, so there's no need to pan-sear or oven-sear the roast.
  4. It won't be as evenly cooked as a slow cooked roast though.
  5. If you cook it until the center is rare, there might still be meat near the outside that's medium rare or even well-done.
  6. When cooking roast beef on high heat, you don't want it sitting in its own juices, and you want it to cook evenly all around.
  7. The best way to do this is to have it sitting directly on the oven rack, with a tray underneath to catch the drippings.
  8. Cook for about 100 minutes, depending on how you like your meat.
  9. Remove the roast from the oven, and let it stand for 20 minutes, covered with tinfoil.
