Yet Another Mediterranean Burger
- 1 12 lbs ground beef
- 8 ounces crumbled feta cheese
- 2 finely chopped scallions
- 14 cup finely chopped fresh parsley
- 14 cup finely chopped fresh cilantro
- 2 finely chopped garlic cloves
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons flour
- 3 tablespoons extra virgin olive oil (optional)
- Mix the all of the ingredients thoroughly in a large bowl.
- If using very lean ground beef you may want to add the olive oil to moisten it a bit.
- Personally, I like the flavor the olive oil adds.
- Form the mixture into patties about 6 oz.
- each.
- Grill until thoroughly cooked (about 7 minutes per side on a 400 degree grill).
- I like to spread a little butter on the buns and grill them for a minute or two to brown toast them.
- Serve with your favorite burger toppings.
