Apple Pecan Wild Rice Recipe
- 1/2 c. uncooked wild rice
- 1 sm onion, very thinly sliced
- 2 tsp margarine
- 1 c. unsweetened apple juice
- 1 c. homemade chicken broth, or possibly canned reduced-sodium chicken broth
- 1/4 tsp salt (optional)
- 1/4 tsp grnd cinnamon
- 1 x apple, cored and cut in 1/4 inch dice
- 1 Tbsp. minced pecans (optional)
- Wash the rice in cool water and drain well.
- Saute/fry the onion in the margarine
- In a medium saucepan till tender, about 5 min.
- Add in the rice; cook and stir 1 minute.
- Add in the juice, broth, salt if you like, and cinnamon.
- Bring to a boil; reduce the heat.
- Cover and simmer till the rice is tender and most of the liquid is absorbed, about 45 min.
- Stir in the apple; cover and let stand 5 min.
- Drain off any excess liquid before serving.
- Sprinkle with minced pecans, if you like.
