Chicken &/or Pork Adobo Recipe
- 1/2 kilo chicken or pork, cut into 1 1/2 inch squares
- 1 head of garlic, chopped coarsely
- 1 head of red onion, chopped coarsely
- 2-3 bay leaf
- 1/4 cup soy sauce (for marinating)
- 1/2 cup soy sauce (adjust to taste)
- 1 cup water
- 1/4 cup vinegar
- salt
- pepper (whole and coarsely grounded)
- corn oil for sauteing
- marinate meat in 1/4 cup soy sauce and pepper for about 10 minutes.
- This is optional but adds considerable flavor to the meat.
- in a pan, heat oil and saute meat until it is brown
- add say sauce, garlic, onion and bayleaf and water.
- simmer until meat is tender and sauce is reduced to half.
- Add salt and pepper according to taste.
- Add vinegar and simmer over low heat.
- Do not stir until the vinegar is fully cooked ( you will taste that the "sourness" of the vinegar has mellowed).
- Let it simmer in low fire for about 5 minutes.
- The sauce should be very reduced by now.
- You may serve this already over steamed rice or you may store and fry in a little oil the next day......
