Chicken &/or Pork Adobo Recipe

  1. marinate meat in 1/4 cup soy sauce and pepper for about 10 minutes.
  2. This is optional but adds considerable flavor to the meat.
  3. in a pan, heat oil and saute meat until it is brown
  4. add say sauce, garlic, onion and bayleaf and water.
  5. simmer until meat is tender and sauce is reduced to half.
  6. Add salt and pepper according to taste.
  7. Add vinegar and simmer over low heat.
  8. Do not stir until the vinegar is fully cooked ( you will taste that the "sourness" of the vinegar has mellowed).
  9. Let it simmer in low fire for about 5 minutes.
  10. The sauce should be very reduced by now.
  11. You may serve this already over steamed rice or you may store and fry in a little oil the next day......
