Pineapple Glazed Chicken Cutlets

  1. Preheat grill.
  2. Pour olive oil, salt and pepper over chicken and toss to coat.
  3. In a small bowl, combine pineapple juice concentrate, honey, garlic and thyme.
  4. Cook chicken over medium-hot coals until almost cooked through.
  5. Brush with pineapple glaze, turning as you coat each side.
  6. Continue to cook until chicken is thoroughly cooked.
  7. Remove from the grill and allow to rest about 5 minutes before serving.
  8. A special note and honey tip: use local honey if you can, its good for you!
  9. When measuring honey, spray your spoon or measuring cup with non-stick cooking spray and it will slide right out!
  10. Try it, it works.
