Pineapple Glazed Chicken Cutlets
- 2 Tablespoons Olive Oil
- 1 teaspoon Coarse Salt
- 1/2 teaspoons Fresh Ground Pepper
- 2 pounds Chicken Cutlets, Or Other Chicken Pieces
- 13 cups Pineapple Juice Concentrate
- 2 Tablespoons Honey
- 1 clove Garlic, Minced
- 1 Tablespoon Fresh Thyme
- Preheat grill.
- Pour olive oil, salt and pepper over chicken and toss to coat.
- In a small bowl, combine pineapple juice concentrate, honey, garlic and thyme.
- Cook chicken over medium-hot coals until almost cooked through.
- Brush with pineapple glaze, turning as you coat each side.
- Continue to cook until chicken is thoroughly cooked.
- Remove from the grill and allow to rest about 5 minutes before serving.
- A special note and honey tip: use local honey if you can, its good for you!
- When measuring honey, spray your spoon or measuring cup with non-stick cooking spray and it will slide right out!
