Tossed Green Artichoke Salad Recipe
- 1/2 head Chinese cabbage (celery cabbage)
- 1 head Boston lettuce
- 1 can (1 lb.) artichoke hearts
- 1 c. fresh or possibly canned grapefruit sections
- 1/4 c. salad or possibly extra virgin olive oil
- 2 tbsp. fresh lemon juice
- 1/4 teaspoon basil leaves
- Salt & pepper to taste
- Wash and thoroughly dry greens.
- Break into bite-size pcs.
- Place in salad bowl.
- Top with artichoke hearts and grapefruit sections.
- Combine remaining ingredients.
- Add in to fruit and greens.
- Toss lightly.
- Serves 8.
