Crabmeat-Broccoli Casserole
- 12 slices bread
- 2 1/2 c. milk
- 1 c. mayonnaise
- 7 hard-cooked eggs, finely chopped
- 1 lb. fresh crabmeat
- 1/4 c. chopped onion
- 1 Tbsp. plus 1 tsp. minced fresh parsley
- 2 (10 oz.) pkg. frozen broccoli
- 1 c. (4 oz.) shredded Cheddar cheese
- Remove crust from bread; cut bread into 1/2-inch cubes. Combine
- bread
- cubes,
- milk and mayonnaise; stir well.
- Cover and refrigerate 30 minutes.
- Remove mixture from refrigerator; stir intggs,
- crabmeat,
- onion
- and parsley.
- Cook broccoli according to package directions; drain well.trrange broccoli in a
- lightly greased

- 9t 2-inch baking dish.
- Spoon crabmeat
- mixture evenly
- over broccoli.
- Bake, uncovered, at 325u0b0
- for
- 40 minutes.
- Sprinkle with cheese and bake an additional 5 minutes or until cheese melts.
