Classic Hummus

  1. Drain the juice from one of the cans of chickpeas into a bowl and reserve 3/4 cup liquid.
  2. Pour the drained chick peas and garlic into a food processor and pulse to roughly chop.
  3. Add tahini, lemon juice, salt, cumin and olive oil and pulse.
  4. Stream in the chickpea juice, 1/4 cup at a time, and turn on high.
  5. Occasionally scrape down the sides with a spatula.
  6. Continue blending and adding juice until desired texture is reached.
  7. Scoop into a dish and sprinkle paprika on four corners.
  8. Drizzle with additional oil if desired.
  9. Serve.
