Classic Hummus
- 2 cans (15 Oz. Can) Chickpeas, Drained (Reserve Some Liquid)
- 3/4 cups Chickpea Liquid From The Can
- 3 cloves Garlic
- 2 Tablespoons Tahini (sesame Seed Paste)
- 1 whole Lemon, Juiced
- 1/2 teaspoons Salt
- 1 teaspoon Cumin
- 1 Tablespoon Olive Oil
- Pinch Of Paprika
- Drain the juice from one of the cans of chickpeas into a bowl and reserve 3/4 cup liquid.
- Pour the drained chick peas and garlic into a food processor and pulse to roughly chop.
- Add tahini, lemon juice, salt, cumin and olive oil and pulse.
- Stream in the chickpea juice, 1/4 cup at a time, and turn on high.
- Occasionally scrape down the sides with a spatula.
- Continue blending and adding juice until desired texture is reached.
- Scoop into a dish and sprinkle paprika on four corners.
- Drizzle with additional oil if desired.
- Serve.
