Broccoli Cheddar Bake

  1. Preheat oven to 350 degrees.
  2. In a nonstick skillet, saute broccoli and onion in a small amount of water until tender.
  3. (Keep adding water.)
  4. Drain and set aside.
  5. In a bowl, combine eggs, skim milk, and 3/4 cup of the cheese; mix well.
  6. Stir in the broccoli and onion.
  7. Add the pepper.
  8. Spray a 1 1/2-quart baking dish with nonstick spray.
  9. Pour the mixture into the baking dish.
  10. Freeze & thaw when ready, or go ahead and:.
  11. Set the dish into a larger pan filled with about 1 inch of water.
  12. Bake uncovered for about 45 minutes.
  13. (When a knife inserted in the center comes out clean, it is done.)
  14. Remove from the oven and top with remaining cheese.
  15. Let stand about 10 minutes before serving.
