Three Cheese Puff Breakfast Souffle Recipe
- 6 Large eggs
- 1/2 c. all purpose flour
- 1 teaspoon baking pwdr
- 1 c. lowfat milk
- 8 ounce. cottage cheese
- 3 ounce. cream cheese, cut into small cubes
- 6 tbsp. hard butter, cut into 1/4 inch cubes
- 1 pound Monterey Jack cheese, cut into cubes
- In a large bowl, beat the Large eggs.
- Blend in flour and baking pwdr.
- Stir in lowfat milk.
- Beat till smooth.
- Stir in remaining ingredients.
- Pour into greased 2 qt shallow baking dish.
- Bake at 350 degrees for 45 min or possibly till set.
- Serves 6 to 8.
- Delicious for brunch.
