Creamy Herb & Garlic Mac n' Cheese
- 2 cups elbow macaroni, uncooked
- 2 Tbsp. butter
- 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 Tbsp. flour
- 1/2 tsp. dry mustard
- 2 cups milk
- 2-1/2 cups Touch of Philadelphia Shredded Creamy Herb & Garlic Cheese, divided
- 1 can (540 mL) diced tomatoes, drained Safeway 1 lb For $1.29 thru 02/09
- Heat oven to 350 degrees F.
- Cook macaroni as directed on package, omitting salt.
- Meanwhile, melt butter in large saucepan on low heat.
- Add onions; cook and stir 3 to 5 min.
- or under crisp-tender.
- Whisk in flour and mustard; cook 2 min.
- Gradually whisk in milk until blended; cook on medium heat 3 to 5 min.
- or until thickened, whisking constantly.
- Add 2 cups cheese; cook 1 min.
- or until melted, stirring constantly.
- Drain macaroni.
- Add to sauce; stir to evenly coat.
- Stir in tomatoes.
- Pour into 8-inch square baking dish sprayed with cooking spray; top with remaining cheese.
- Bake 15 min.
- or until heated through.
