Pina Colada Cake
- 1/2 c. cooking oil
- 1 pkg. yellow cake mix
- 2 eggs
- 1 c. coconut
- 1 small can crushed pineapple with juice
- 1 c. water
- 1 pkg. instant vanilla pudding or lemon or pineapple
- Cool Whip
- Pour 1/2 cup cooking oil in bottom of rectangular cake pan. Dump 1 package yellow cake mix over top of oil and add eggs, coconut and pineapple with juice and water.
- Stir until ingredients are mixed well.
- Bake at 350u0b0 for 35 to 40 minutes (test with toothpick for doneness).
- Remove from oven and poke holes in cake with handle of wooden spoon.
- Make package of instant pudding as directed on package.
- When slightly set, pour over cake so that pudding goes in holes. The rest over the cake.
- Before serving, top with Cool Whip and generously sprinkle with coconut.
