Mint Chutney
- 10 tbsp. finely chopped mint leaves
- 2 tbsp. finely chopped coriander leaves
- 2 to 4 tbsp. lime juice
- 1 green chili, seeded and finely chopped
- 4 spring onions, finely chopped
- 1 tsp. salt
- 1 tsp. caster sugar
- 1/2 tsp. garam masala
- Mix together all ingredients and briefly blend in a food processor.
- Serve in small bowls, surrounded by pakoras.
