Lasagna Roll-Ups
- 12 uncooked lasagna noodles
- 1 lb lean ground beef
- 1 large onion, chopped
- 1 (14 ounce) jar spaghetti sauce
- 1 (8 ounce) can mushroom stems and pieces, undrained
- 1 (15 ounce) container ricotta cheese
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed to drain
- 1 cup shredded mozzarella cheese
- 12 cup grated parmesan cheese
- 1 teaspoon salt
- 14 teaspoon pepper
- 1 teaspoon garlic powder
- Heat oven to 350 and cook and drain noodles as directed on package.
- Cook beef and onion in skillet over med-high heat about 6 minutes, stirring occasionally, until beef is brown; drain.
- Stir in spaghetti sauce and mushrooms then heat to a boiling, stirring constantly.
- Pour into ungreased 11 by 7 by 1 1/2 inch baking dish.
- Mix ricotta cheese, spinach, mozz cheese, parmesan cheese, salt, pepper and garlic and spread 3 tablespoons of this cheese mixture over each noodle.
- Roll up each noodle and cut crosswise in half.
- Place cut side down on top of beef mixture.
- Cover with foil and bake 30 minutes.
- Serve with additional Parmesan cheese and enjoy!
