Steel Oat Muffins
- 2 cups steel cut oats
- 12 egg whites
- 2 granny smith apples, chopped
- 1 tablespoon cinnamon
- 12 teaspoon vanilla extract
- 3 tablespoons Splenda Sugar Blend for Baking
- 1 teaspoon lemon zest
- 1 teaspoon orange zest
- 12 cup raisins
- 14 cup ground flax seeds
- Combine all ingredients, mix with electric mixer for 2 minutes.
- Pour into nonstick muffin pans.
- Bake at 375 for 15-20 minutes.
- For bread pan, cook at 375 for 60 minutes or until toothpick comes out clean.
- Store in ziplock bags or Tupperware in refrigerator.
