Hot Spinach Dip

• 8 ounces cream cheese, cubed
• 1 (10 ounce) box frozen spinach
• 5 scallions, sliced thinly
• 8 ounces monterey jack pepper cheese, cubed
• 3 plum tomatoes, chopped

1. thaw and squeeze all the water out of the spinach.
2. combine all ingredients in 2 qt.baking dish.
3. bake at 350 for about 45 minutes.
4. stir a few times during baking,till creamy and hot.
5. grab a bag of garlic bagel chips and dig in!
