Fresh Sage & Pepper Popovers

  1. Heat oven to 450F.
  2. Combine all sage butter ingredients in bowl; beat at low speed, scraping bowl often, until creamy.
  3. Cover; refrigerate until serving time.
  4. Beat eggs in bowl at medium speed, scraping bowl often, until thick and lemon-colored.
  5. Add milk; continue beating 1 minute.
  6. Stir in all remaining popover ingredients.
  7. Pour batter into well-greased 6-cup popover pan or 6 (6-ounce) custard cups.
  8. Bake 15 minutes.
  9. Reduce oven to 350F.
  10. Do not open oven door.
  11. Bake 25-30 minutes or until golden brown.
  12. Insert knife into popovers to allow steam to escape.
  13. Serve immediately with sage butter.
  14. *Substitute 1/2 teaspoon dried sage leaves.
