Green Onion and Potato Dish
- 2 big potatoes, peeled and cubed in bite size pieces
- 15 -20 stalks of fresh green onions, washed thoroughly
- 1 teaspoon cumin seed
- 2 whole dried red chilies
- 14 teaspoon garam masala powder
- 12 teaspoon coriander or 12 teaspoon dhaniya powder
- turmeric powder, a pinch
- 12 teaspoon chat masala (optional)
- 2 tablespoons oil
- salt, to taste
- Chop green onion into thin slices, keep the white part separate and green separate.
- Heat oil in a karahi/wok and add cumin seeds.
- Once they crack add whole dried red chili and fry for 10-15 seconds.
- Now add potato and fry on medium heat until they turn partial golden brown.
- Now lower the heat and add garam masala, coriander powder, turmeric powder, salt and chaat masala.
- Fry for another 30 seconds and then add the white part of onion.
- Stir and cover the wok, let it cook for 10-15 minutes or until potatoes are cooked thoroughly.
- Now add the sliced green onion and cook for another 2-3 minutes.
- Serve hot with paratha!
- Eat fresh or pack for lunch.
