E Z Pumpkin Delight Recipe

• 1 box yellow cake mix
• 1/2 c. melted butter
• 4 Large eggs
• 1 lg. can pumpkin
• 1/2 teaspoon salt
• 1/2 c. brown sugar
• 1/2 c. white sugar
• 1 (13 ounce.) can evaporated lowfat milk
• 1/2 c. nuts
• 2 teaspoon cinnamon
• Healthy pinch of nutmeg & ginger

1. Save 1 c. cake mix.
2. Mix rest of mix with 1 egg and 1/4 c. butter.
3. Press into 9 x 13 inch ungreased pan.
4. Mix pumpkin, 3 Large eggs, cinnamon, nutmeg, ginger, salt, brown sugar and evaporated lowfat milk.
5. Pour over cake fold in pan.
6. Mix 1/2 c. white sugar with 1/4 c. butter and crumble with 1 c. saved cake mix and nuts.
7. Sprinkle over top of cake and bake 1 hour at 350 degrees.
8. Serve with Cold Whip.
