Smoky Waldorf Salad

  1. In a large bowl, toss the diced apples and pears in the lemon juice.
  2. Add the celery, onion, pecans, and smoked Gouda.
  3. Stir together the Dijon mustard, sugar, black pepper and mayonnaise.
  4. Gently fold into the salad and mix well.
  5. Add salt, if needed, to taste.
  6. Chill until ready to serve.
  7. Serve on a bed of baby spinach or other greens.
