Smoky Waldorf Salad
- 2 medium apples, cored and diced
- 1 medium pear, cored and diced
- 2 tablespoons lemon juice
- 1 cup diced celery
- 13 cup chopped red onion
- 12 cup pecans, coarsely chopped
- 4 -6 ounces smoked gouda cheese, rind removed and cut into cubes
- 1 teaspoon Dijon mustard
- 1 teaspoon sugar
- 14 teaspoon coarse black pepper
- 12 cup mayonnaise, amount to taste
- salt, to taste
- Baby Spinach, to serve
- In a large bowl, toss the diced apples and pears in the lemon juice.
- Add the celery, onion, pecans, and smoked Gouda.
- Stir together the Dijon mustard, sugar, black pepper and mayonnaise.
- Gently fold into the salad and mix well.
- Add salt, if needed, to taste.
- Chill until ready to serve.
- Serve on a bed of baby spinach or other greens.
