Roasted Asparagus and Red Pepper Turkey Wraps

  1. Preheat broiler.
  2. Snap off the tough ends of the asparagus.
  3. Cut the bell pepper lengthwise into strips.
  4. Discard membrane and seeds.
  5. Line asparagus spears and pepper strips on a cookie sheet.
  6. Brush with some olive oil and coarse salt and pepper.
  7. Broil for about 10 minutes until veggies are tender and slightly blackened.
  8. Mix honey, lemon juice, mayo, salt and cayenne together.
  9. Lay out a spinach tortilla and brush with the honey mayo mixture.
  10. Add a romaine leaf and 4 pieces of turkey.
  11. Top with a few asparagus spears and red pepper strips.
  12. Finish with a little more of the honey mayo.
  13. Roll into a wrap and cut into two pieces.
  14. Yum!
