Lasagna Rollups
- 1 packages lasagna noodles
- 1 1/2 packages pancietta (basically diced bacon-found in coolers by deli)
- 1 packages frozen spinach, thawed
- 1 8 oz ricotta
- 1 egg
- 1 small diced onion
- 1 tsp minced garlic
- 1 tbsp olive oil
- 1 pinch each season salt and black pepper
- 1 1/2 jars of your favorite spaghetti sauce (I use Prego)
- 1 packages shredded four cheese blend
- Preheat oven @ 400 .
- Saute pancietta, onion & garlic in 1 tbsp olive oil.
- Set aside when done.
- Boil noodles as directed & let cool.
- Mix ricotta and egg, first, then add all ingredients together, except noodles.
- Then take 1 noodle & spread mixture from end to end.
- Take one end & roll it up.
- Place in greased 13x9in pan seam side down.
- Repeat.
- When finished, pour spaghetti sauce on top, then shredded cheese.
- Cover with foil & bake for 40 minutes then serve with salad and garlic bread.
