Berry Nice Corn Muffins

  1. Preheat oven to 400u0b0.
  2. Grease muffin cups.
  3. Combine dry ingredients well.
  4. Combine wet ingredients, except rind and berries.
  5. Make a well in center of dry ingredients; pour in the wet ingredients.
  6. When partially blended, add berries and rind. Mix sparingly; don't overmix.
  7. Fill 12 muffin cups.
  8. Bake for 20 minutes.
  9. Cool in pan for 10 minutes before removing.
