Berry Nice Corn Muffins
- 1 c. cornmeal
- 1 c. unbleached white flour
- 1/2 tsp. salt
- 1/2 c. brown sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 large egg
- 4 Tbsp. melted butter or margarine
- 1/2 c. buttermilk or yogurt
- 1/2 c. orange juice
- grated orange rind (whole orange)
- 1 1/2 c. raspberries, cranberries, etc.
- Preheat oven to 400u0b0.
- Grease muffin cups.
- Combine dry ingredients well.
- Combine wet ingredients, except rind and berries.
- Make a well in center of dry ingredients; pour in the wet ingredients.
- When partially blended, add berries and rind. Mix sparingly; don't overmix.
- Fill 12 muffin cups.
- Bake for 20 minutes.
- Cool in pan for 10 minutes before removing.
