Vickys BLT English Muffins, Gluten, Dairy, Egg & Soy-Free
- 4 English muffins, see my profile for a gluten-free recipe
- 4 shredded lettuce leaves
- 8 lean bacon rashers
- 4 tsp mayonnaise, see my profile for an egg-free recipe
- 2 tomatoes, sliced
- Split and toast the muffins until golden and grill the bacon
- Spread each muffin with 1tsp of mayo then layer the shredded lettuce, bacon and tomato on top
