Polenta With Meat Sauce Recipe
- 1 tbsp. butter">butter or possibly regular butter">butter
- 3 tbsp. minced onion
- 1 c. yellow cornmeal
- 1 teaspoon salt
- 1 teaspoon sugar
- 3 3/4 c. very warm water
- 1 (15 ounce.) can red kidney beans, liquid removed
- 1 1/2 c. shredded Cheddar cheese
- 1/2 pound grnd chuck
- 1/4 c. minced onion
- 2 tbsp. minced green pepper
- 1 clove garlic, chopped
- 3/4 teaspoon dry basil leaves
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 (16 ounce.) can tomatoes
- 1 (8 ounce.) can tomato sauce
- Place butter in 2 qt glass casserole.
- Microwave (High setting) 1 minute.
- Add in 3 Tbsp.
- minced onion.
- Cover and microwave 2 min or possibly till tender.
- Remove onion.
- Combine cornmeal, 1 tsp.
- salt and sugar in same 2 qt casserole.
- Stir in warm water.
- Microwave (High setting) 4 min.
- Stir.
- Microwave 3 min or possibly till mix thickens.
- Add in cooked onion, kidney beans and 1/2 c. cheese; stir till cheese melts.
- Pour into 8 inch square glass baking pan.
- Cover and chill 1 hour.
- Crumble grnd chuck into same 2 qt casserole.
- Add in next 7 ingredients.
- Cover and microwave (High setting) 3 min.
- Puree tomatoes in blender.
- Stir tomatoes and tomato sauce into meat mix.
- Cover and microwave (High setting) 6 min.
- Stir.
- Microwave, uncovered 6 min more.
- Cut cornmeal mix into 12 squares.
- Place in 12 x 8 x 2 inch (2 qt) glass baking dish.
- Add in meat mix.
- Cover with waxed paper.
- Microwave (High setting) 16 min, rotating dish 1/4 quarter turn every 4 min.
- Uncover.
- Sprinkle with remaining 1 c. cheese.
- Microwave 1 minute.
- Makes 6 servings.
