Polenta With Meat Sauce Recipe

  1. Place butter in 2 qt glass casserole.
  2. Microwave (High setting) 1 minute.
  3. Add in 3 Tbsp.
  4. minced onion.
  5. Cover and microwave 2 min or possibly till tender.
  6. Remove onion.
  7. Combine cornmeal, 1 tsp.
  8. salt and sugar in same 2 qt casserole.
  9. Stir in warm water.
  10. Microwave (High setting) 4 min.
  11. Stir.
  12. Microwave 3 min or possibly till mix thickens.
  13. Add in cooked onion, kidney beans and 1/2 c. cheese; stir till cheese melts.
  14. Pour into 8 inch square glass baking pan.
  15. Cover and chill 1 hour.
  16. Crumble grnd chuck into same 2 qt casserole.
  17. Add in next 7 ingredients.
  18. Cover and microwave (High setting) 3 min.
  19. Puree tomatoes in blender.
  20. Stir tomatoes and tomato sauce into meat mix.
  21. Cover and microwave (High setting) 6 min.
  22. Stir.
  23. Microwave, uncovered 6 min more.
  24. Cut cornmeal mix into 12 squares.
  25. Place in 12 x 8 x 2 inch (2 qt) glass baking dish.
  26. Add in meat mix.
  27. Cover with waxed paper.
  28. Microwave (High setting) 16 min, rotating dish 1/4 quarter turn every 4 min.
  29. Uncover.
  30. Sprinkle with remaining 1 c. cheese.
  31. Microwave 1 minute.
  32. Makes 6 servings.
