Mussels BLT

  1. Heat a large straight-sided saute pan over medium heat.
  2. Add the bacon and saute until the fat is rendered, about 5 minutes.
  3. Add the shallots and garlic and saute until softened, another 3 minutes.
  4. Stir in the olive oil, crushed tomatoes, salt, and white wine and chili flakes.
  5. Bring to a simmer, add the mussels, and cover.
  6. Steam until mussels open, about 4 minutes.
  7. Remove from the heat.
  8. Discard any unopened mussels.
  9. Stir in the butter, lemon juice, and arugula.
