Raspberry Streusel Muffins
- 1/2 c. butter, softened
- 1/2 c. sugar
- 2 c. unsifted flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 c. milk
- 1/2 c. sour cream
- 1 tsp. vanilla
- 1 c. fresh raspberries or frozen, thawed and drained
- Grease 12 (3-inch) muffin pan cups.
- Heat oven to 400u0b0.
- In medium size bowl, combine flour, baking powder, soda, cinnamon and salt.
- In small bowl, combine milk, sour cream and vanilla.
- In large bowl, with electric mixer, cream together butter and sugar until light and fluffy.
- Add egg.
- Beat until well blended.
- Add flour mixture alternately with milk mixture, beating until batter is just combined.
- Gently fold in raspberries.
