Squash Soup

  1. Prick squash several times with fork.
  2. Microwave whole squash on HIGH 2 min.
  3. Cut squash in half lengthwise; remove seeds.
  4. Place squash, cut-sides up, in shallow microwaveable dish.
  5. Cover loosely.
  6. Microwave on HIGH 8 to 10 min.
  7. or until tender, turning dish every 4 min.
  8. Let stand 5 min.
  9. Scoop out squash into medium saucepan; mash.
  10. Add all remaining ingredients except dressing; bring to boil.
  11. Cover.
  12. Simmer on medium heat 12 to 15 min.
  13. or until carrots and onions are tender, stirring occasionally.
  14. Whisk in dressing until blended.
  15. Cook until heated through, stirring occasionally.
