Candy Apple Cake

  1. Preheat oven at 350F Coat a 9x13-inch baking dish with nonstick cooking spray.
  2. In a large saucepan, combine the red cinnamon candies, sugar, 1/2 cup apple juice, and food color.
  3. Heat over high heat, stirring until candies dissolve.
  4. Add apples and bring to a boil, stirring occasionally.
  5. Boil for 5 to 7 minutes, or until the apples are tender; spoon into the baking dish.
  6. In a medium bowl, combine cake mix, pudding mix, eggs, sour cream, and the remaining 1/2 cup apple juice.
  7. Mix well and spoon over the apple mixture, spreading to completely cover.
  8. Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean.
  9. Allow to cool slightly, then invert over a serving platter.
  10. Allow to cool completely.
  11. Cut into squares and serve.
