Lighter Pumpkin Chip Mini Muffins

  1. Mix first 5 ingredients together.
  2. Blend dry ingredients (not including chocolate chips).
  3. Gently blend two mixtures together and fold in chocolate chips.
  4. Generously fill greased mini muffin tins and bake at 400F for 11-15 minutes and check for doneness.
  5. If you want to make regular muffins add 5 minutes to cooking time and for jumbo muffins add 10 minutes.
  6. I prefer these muffins done as mini muffins.
