Lighter Pumpkin Chip Mini Muffins
- 4 eggs
- 34 cup vegetable oil
- 1 (28 ounce) can pumpkin
- 34 cup brown sugar
- 34 cup white sugar
- 3 14 cups flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 12 teaspoon ground nutmeg
- 14 teaspoon ground cloves
- 1 teaspoon salt
- 1 cup mini chocolate chip
- Mix first 5 ingredients together.
- Blend dry ingredients (not including chocolate chips).
- Gently blend two mixtures together and fold in chocolate chips.
- Generously fill greased mini muffin tins and bake at 400F for 11-15 minutes and check for doneness.
- If you want to make regular muffins add 5 minutes to cooking time and for jumbo muffins add 10 minutes.
- I prefer these muffins done as mini muffins.
