Creamy Broccoli Potato Soup

  1. Combine first 11 ingredients in a heavy dutch oven or stockpot.
  2. Cover and heat to a boil.
  3. Reduce heat and simmer 30 minutes or until potatoes are al dente.
  4. Then add milk, parmesan cheese, and pepper jack cheese.
  5. Cook over very low heat until cheese is melted.
  6. Stir constantly to prevent sticking.
  7. Serve with sourdough bread or rolls.
  8. Or toast some homemade croutons in the oven.
