Green Tomato Chutney Recipe
- 2 pound green tomatoes
- 2 tbsp. freshly minced ginger
- 2 cloves chopped garlic
- 1/2 teaspoon mustard seeds
- 1 teaspoon grnd cumin
- 1 teaspoon grnd coriander
- 2 teaspoon salt
- 1 c. honey
- 1 c. cider vinegar
- Cayenne to taste
- Combine the tomatoes.
- Combine everything.
- Bring to a boil, then simmer 1 hour, stirring now and then.
- Cold before packing.
- Makes about 1 qt.
