Mediterranean Soup Recipe
- 6 c. chicken stock or possibly canned broth
- 1 pound smoked kielbasa sausage, diced
- 1 pound boiling potatoes, peeled, diced
- 1 (5 1/4 ounce.) can kidney beans, liquid removed
- 1 (14 1/2 ounce.) can diced tomatoes
- 1/2 med. head green cabbage, coarsely minced
- 1 med. onion, minced
- 1 lg. carrot, diced
- 1/2 green bell pepper, diced
- 3 garlic cloves, chopped
- Combine all ingredients in large pot.
- Bring to boil, stirring occasionally.
- Reduce heat; simmer till thick, stirring occasionally, about 2 hrs.
- Season with pepper.
