Easiest Ever Choucroute
- 1 tablespoon olive oil
- 1 12 lbs thin boneless pork chops, cut into 1/2-inch slices
- 18 teaspoon salt
- 14 teaspoon black pepper
- 12 large onion, thinly sliced
- 2 apple flavored chicken sausage, fully cooked, sliced into 1/2 coins
- 1 (12 ounce) bottle dark beer
- 1 (16 ounce) bag coleslaw mix
- 14 cup cider vinegar
- 2 tablespoons brown sugar
- 1 teaspoon caraway seed
- 12 teaspoon salt
- 18 cup fresh parsley leaves, chopped
- Heat oil in large skillet.
- Add pork and season with 1/8 tsp salt and black pepper.
- Cook 3-4 minutes until cooked through.
- Remove and set aside.
- Add onion and sausage to skillet.
- Cook 5 minutes.
- Add beer and scrape up any browned bits.
- Stir in coleslaw mix, vinegar, brown sugar, caraway seed and 1/2 tsp salt.
- Cook 7 minutes, stirring occasionally.
- Add pork to pan and heat through.
- Garnish with parsley and serve.
