Bok Choy & Red Pepper Laska

  1. Cook noodle according to type (some are boiled, others just soaked, drain.
  2. In a pan place oil and add curry paste and stir fry for 30 seconds.
  3. Quickly add coconut cream and 2 cups of water.
  4. Bring to a boil and add vegetables.
  5. Simmer for 2 minutes or until vegetables are cooked to your liking.
  6. To serve, divide noodles between 3 bowls.
  7. Pour over soup and vegetables and top with basil leaves.
  8. Feel free to use other veiggies.
