Phyllo pie with chicken, spinach, feta cheese
- 1 piece shredded chicken breast
- 1 packages creamed spinach
- 2 oz feta cheese
- 1 oz goat cheese
- 1 tsp lemon juice
- 4 piece phyllo dough
- 1 pinch salt and pepper
- 1/4 stick butter
- Thaw phyllo
- Preheat oven to 400
- Microwave creamed spinach on high 4 minutes
- Melt butter via stove or microwave
- Coat baking dish with butter.
- Place 1 sheet phyllo in dish overhanging one side 6".
- Brush with butter.
- Repeat for remaining sides.
- Repeat with second layer.
- Remove cooked chicken from oven and using a fork shred.
- Combine chicken, spinach, cheese, lemon and S&P in bowl.
- Spread mixture over phyllo and brush with butter.
- Turn edges of phyllo over spread.
- Bake 25 minutes or until golden brown.
- Let stand 5 minutes.
