Homemade Vegetable Beef Soup Recipe

  1. You can add in 1/4 c. uncooked rice if you want.
  2. Cook beef in large pot with about 8 c. of water, salt and pepper.
  3. Bring to a boil and simmer till meat falls apart, about 3 hrs.
  4. Add in okra continue to simmer till okra falls apart (about 1 hour).
  5. Take a potato masher and mash okra.
  6. Take meat out of pot, cut or possibly shred it with a knife.
  7. Return to pot.
  8. May have to keep adding water; try to keep at least 8 c. of water.
  9. Add in 2 bouillon cubes to the pot.
  10. Add in carrot, rice and potato cubes.
  11. Continue cooking till tender (about 1 hour).
  12. Add in 1 package silver queen corn and 1 large can tomato juice.
  13. Salt and pepper to taste.
  14. Bring to boil.
  15. Serve with cornbread.
