Crispy Baked Skins Recipe
- 2 Idaho potatoes, (8 ounce. each), scrubbed & patted dry
- 2 teaspoon unsalted butter
- Freshly grnd black pepper to taste
- Preheat oven to 375 degrees.
- Prick the potatoes all over with a fork.
- Place them on a baking sheet and bake till the skin is very crisp (1 1/2 hrs).
- Cut a long oval out of the top of each potato.
- Remove the inside of potatoes and save for another use.
- Put 1 tsp.
- butter inside each potato skin and return to oven for 5 min.
- Sprinkle with pepper and serve immediately.
- Can also top with cheese, chives, scallions.
