Brett Fava Beans
- 2 pounds fava beans
- 3 tablespoons butter
- 2 medium shallots, minced
- 2 tablespoons salt
- 1 tablespoon freshly ground black pepper
- 1/2 cup shredded Parmesan

- Bring a large pot of water to a boil over medium heat.
- Add the fava beans and cook until tender.
- Drain the beans and let cool, then peel.
- Melt the butter in a pan over low heat and cook shallots until translucent.
- Add the fava beans and cook for 3 minutes.
- Stir in the salt, pepper and Parmesan.
- Transfer the beans to a serving bowl and serve.
