Coconut Shrimp (Camarones Di Coco)
- 2 cups coconut milk
- 12 cup unsweetened dried shredded coconut
- 12 cup sweetened flaked coconut
- 1 tablespoon baking powder
- 1 egg, beaten
- 1 cup flour
- 14 cup oil
- 24 jumbo shrimp, peeled and cleaned
- 1 pinch pepper
- 1 pinch garlic powder
- 1 pinch ground cumin
- 1 pinch onion powder
- Combine egg and coconut milk in a large bowl.
- Add shrimp and marinate for 30 minutes.
- Blend all spices, flour, baking powder, and coconut by pulsing them a few times in the food processor.
- Dredge the shrimp in the coconut batter.
- Heat the oil in a frying pan and fry shrimp until they are golden brown on both sides.
