Easy Simmered Yellowtail
- 4 Yellowtail filets
- 2 tbsp Soy sauce
- 2 tbsp Mirin
- 1 tsp Sugar
- 360 ml Water
- Pour hot water over the fish or dip the fish in a pot of boiling water.
- If the fish turns white, it's ready.
- Pour all the ingredients and water into a pot and turn on the heat.
- When it comes to a boil, add the fish and cover with a drop lid (otoshibuta).
- Simmer in medium heat until the sauce reduces by 1/2 to 1/3.
- Remove the lid and pour the sauce over the fish with a ladle.
- Simmer in low heat for 1 to 2 minutes.
- When the fish turns shiny, it's done.
