Taylor's Potato Salad
- 6 yukon gold potatoes, washed and skins left on.
- 3 scallions, sliced
- 3 hard boiled eggs, peeled
- 1/2 cup prepared mayonnaise
- 1 tsp salt
- 2 1/2 tbsp malt vinegar
- 1/2 tsp fresh grated peppercorn blend
- 1/2 tsp brown mustard
- 1/8 tsp celery seed
- 1 tbsp chopped flat leaf parsley
- Boil potatoes until just tender.
- This can take up to 15-20 minutes depending on size.
- Drain and cool.
- In a large serving platter add all other ingredients except eggs.
- Mix well.
- Add potatoes that have been cut into large chunks and toss gently.
- Slice eggs and toss gently again.
- I serve this potato salad warm but you may chill several hours before serving.
